French crepes with AOP Ardèche chestnut flour

List of ingredients

  • 250 g ‘Châtaigne d’Ardèche AOP’ flour
  • 250 g plain flour
  • 3 eggs
  • 70 g butter
  • 1 l milk
  • A pinch of sal

Preparation

Mix the chestnut flour and the plain one (to avoid lumps, you can sift them first).

Dilute the whole with some milk.

Add the beaten eggs, the melted butter and salt.

Pour the rest of milk while mixing until you get a smooth batter.

Set aside for an hour.

Add a drizzle of oil, then wipe out the excess with kitchen paper. Heat the pan.

Cook and brown both sides of the crepes and enjoy !
