Here in the mountains of the Ardèche, every morning we turn the milk from our grass-fed ewes into delicious cheeses… But the work isn’t over yet; after production comes the ripening process. Indeed, some cheeses will need just a few days, whilst others will require several months to develop their full flavour and a creamy texture.
