Vervinia isn't a big restaurant: it's a house. A unique table for sixteen guests in the heart of Chanos-Curson, where nature sets the pace and every detail has been thought out, shaped and felt. The wood of the tables, the ceramic of the plates, the light that glides over the stone… here, everything tells a story even before a dish arrives.
Vervinia is an extension of me. An intimate, contemporary and sincere space where I reveal myself without artifice. A place where refinement meets simplicity, where silence dialogues with matter. Those who walk through the door don’t just come to dine: they enter into an experience – rare, immersive, confidential.
I believe that cooking is a form of love. It demands time, rigor and sensitivity. It demands the right balance between controlled gesture, emotion, and the letting go that allows living things to express themselves.
Vervinia is that balance. Everything I’ve learned, everything I’ve been through, everything I’ve searched for comes together here. Each dish is a memory reinvented; each guest a mirror of what I want to transmit: the beauty of the simple, the nobility of the true, the accuracy of taste.
I’m not trying to tell an extraordinary story. Just my own. That of a child from the Drôme who grew up between verbena and vines, and chose to make a world of it: Vervinia.
Here, fire doesn’t burn: it enlightens. And every plate is a promise of sincerity and poetry.

From 01/01 to 31/12/2026 on Wednesday, Thursday, Friday and Saturday between 9.30 am and 11.30 pm. On Sunday between 9.30 am and 2 pm. Closed on Monday and Tuesday.
